Having all your necessary tools and food organized and ready to go will help ensure that the grill goes smooth. Prep what you can the day before- it’s one less thing to do the day of. Being prepared means you get to chill and enjoy the day.

If you are rooftop or sidewalk grilling, preparation is especially crucial since forgetting something means you are walking a few flights of stairs.

Good, quality ingredients, seasoned and prepared with love. I know it sounds simple but honestly, that yields the best results. Choose seasonal ingredients and don’t overdo it on the BBQ sauce- let the grill, the food and a light seasoning or marinade take the lead.
The person behind the grill is key. They have to know when to flip and flip with precision. Not to mention have a good understanding of starting a fire safely and the best way to arrange your food on the grill. Grilling is very easy- after you learn the basics push your repertoire to include unique grilling methods/foods, different charcoal arrangements, wood chips etc.
*A lot rests on the shoulders of the person that takes control over the grill- choose this person wisely. Don’t pick the social butterfly, your friend that bails early, or uncle that takes too many trips to the cooler for this job or your food will suck.*
The perfect grilling soundtrack will add that certain je n se quoi to your meal….plus it makes the heat a bit more bearable (pun intended)!

Pick a Great Spot
Pick a great spot- free of debris and hopefully with a good view. Don’t grill too close to any doors or garbage. If you are grilling on a holiday- stake your claim for the primo spot before the neighbors do.
Have fun grillin- just, be smart. Don’t grill near anything flammable. BE CAREFUL WITH LIGHTER FLUID. Don’t annoy the block w/ your antics. Basically, don’t be an idiot and &%$@# up!
Invest in Portable Furniture
A couple of inexpensive tables and chairs in a bag will upgrade your rooftop/sidewalk grilling experience- definitely worth the investment. They are easy to transport and light to carry so you can really set up shop anywhere. The goal is to set up and break down your grill area in as few trips as possible- portable furniture helps!
Be Neighborly- Clean Up!
Bring plastic bags and paper towels with you to keepthe area clean. If you tie a bag to your table you won”t have to chase your garbage every time the wind gusts.
Invest in good ipod speakers, or a portable music solution. Don’t be that guy carrying amps to the roof.
