Crispy Zucchini & Onion Pancakes

Zucchini fritters are the perfect vegetarian comfort food!
What is a Zucchini Fritter?
Zucchini fritters are similar to a potato pancake. These crispy fritters are made of shredded zucchini & onions and spiced to give them a little kick.
Zucchini fritters are delicious plain, topped with essentially anything or dipped into a medley of delicious dipping sauces. These fritters are simply the perfect vehicle to complement a slew of great flavors.
Zucchini fritters make for a delectable main dish complemented with roasted vegetables, a salad and/or rice.....
...or they can easily be transformed into a sophisticated hors d'oeuvre for cocktail parties. Make mini fritters to pair with a soy-ginger dipping sauce, top them with cured fish or add a dollop of a prepared dip.
(Makes 20 - 45 Fritters)
I Large Zucchini, shredded
1/2 Large Onion, thinly sliced
1/4 C Green Onions, minced
1/4 C Parsley, minced (optional)
3/4 C Flour
1/2 t Salt
1/4t Fresh Ground Pepper
1/4- 1/2 t Cayenne Pepper
1/3 C Milk
2 t Melted Butter
1 Egg, beaten
Hot Sauce, a healthy dash
Veggie or Canola Oil, for frying

Mix Dry Ingredients:
Combine flour, salt, cayenne & black pepper- mix well.
Mix Wet Ingredients:
In a separate bowl, beat the egg.
Add milk, hot sauce, and butter to beaten egg. Mix well.
Combine wet and dry ingredients.
Cover and let sit at room temperature for about 30 minutes.
Add the Veggies:
Add the onions, zucchini, parsley & green onions to batter. Mix well.
Fry n Serve:
Heat 1/2 inch oil in pan till about 375 degrees.
Drop batter into frying pan in tablespoon sized spoonfuls. Use the side of the spoon to flatter out fritter in pan.
Fry for 1-2 minutes on each side until browned and crispy.
Drain fritters and season w/ salt immediately.
Serve the fritters hot.
